Easy, Quick, Chili 

What you Need:

White Onion - Large

Ground Beef (Turkey, or no meat!) - 1/2 Lb. 

Garlic Cloves (4 - or garlic powder)

Kidney Beans - 2 cans 

Corn - 1 can

Canned Tomatoes w/ Green Chilies - 1 can

Chick Peas - 1 Can

Pinto Beans - 1 Can

Seasonings: 

Chili Powder - 3 tbsp

Cumin - 1 tsp 

Paprika - 1 tbsp

Cayenne - 1/2 tsp 

Salt & Pepper - add to taste 

Toppings (add when serving): 

Green onion

Sour Cream

Cheddar Cheese 

What To Do:
  1. Heat pan with a little oil to cook meat​​​

    1. once meat is cooked, drain and rise - i like to get rid of extra oils​​​

    2. place meat back into pan - low heat - add chopped garlic, chili powder, cumin, paprika, salt & pepper

  2. in a larger pot/ or crock pot add (do not drain)​​

    1. kidney beans​, corn, canned tomatoes, chick peas, 

  3. place on low and stir every 30min-an hour

  4. leave in pot/ crock pot for an hour

  5. serve & add toppings if desired 

Chicken Tortilla Soup

What you Need:

Chciekn Breasts (1-1/2 - 2 lbs) 

Garlic Cloves (4 - or garlic powder)

Corn - 1 can

Cilantro (optional) 

Black Beans - 1 Can 

Chicken Broth - 48oz 

(I use water & Bullion cubes, i like the falvor better)

Seasonings: 

Chili Powder - 3 tbsp

Garlic Powder - 1 tsp 

Paprika - 1 tbsp

Cumin - 

Paprika -
Cayenne - 1/2 tsp 

Salt & Pepper - add to taste 

Toppings (add when serving): 

Green onion

Tortilla Strips

Avocado Slices

What To Do: 
  1. Place Chicken in the bottom of the crockpot 

  2. Add seasonings & chicken broth 

  3. Drain Black Beans & Corn 

    1. add to crock pot ​​​​​

  4. Leave in crockpot on high for 4-6 hours or low for 6-8

  5. Mix and shred chicken in last 30 minutres of cooking

  6. Serve & enjoy

Classic Chicken Noodle

What you Need:

Creamy Potato Soup 

What you Need:

Bacon (optional) - 5 Strips

Golden Potatoes - 1 & 1/2 Lb

Milk - 3 cups

Cream Cheese - 8oz

Cheddar Cheese - 2 Cups

White onion - Diced - 1 Cup

Flour - 1/4  Cup 
Chicken or Vegetable Stock - 2 Cup
Garlic Cloves - 4 

Seasonings: 

Salt - 1 tsp

Pepper - 1 tbsp 

Toppings (add when serving): 

Green onion

Crispy Bacon Bits 

What To Do
  1. Cook the bacon. 

    1. Once cooked transfer the bacon to a plate lined with paper towels, and reserve a few tablespoons of leftover grease in the stockpot (discarding the rest.) ​​

    2. Chop Bacon into Bits or Chunks 

  2. In a pan with leftover Bacon grease Sauté the veggies. Sauté the onion and garlic in the bacon grease until softened.  Then stir in some flour, to thicken and create a roux. 

  3. Wash potatoes and then cut them into cubes 

  4. In a crock pot, add broth and potatoes. 

    1.  Then add the stock, milk and potatoes. 

  5. Add remaining ingredients into crock pot

  6. Leave in crockpot on LOW for 2-3 hours. make sure to stir every 30 minutes or so. 

  7. Add salt & Pepper to taste. 

  8. Serve warm.  Then serve it up, loaded up with all of your favorite toppings!
